Oyster & Sausage Wraps
This is a classic Chinese New Year dish, containing ingredients that are plays on words in Chinese: oysters which represent good fortune, mushrooms which represent opportunity and lettuce which represent wealth and prosperity. The textures and flavors combine to a delicious stuffing that can be wrapped in lettuce or flour pancakes. There's lots of cutting here, which is a challenge to perfect your knife skills!Ingredients
- 6 brunoised (about 2 cups) of Chinese Red Lap Cheung sausages
- 1 cup, brunoised (about 1.5 cups) of shiitake mushrooms
- 2 cups of peeled and brunoised fresh water chestnuts or jicama
- 3 tins of rough chopped smoked oysters (drained)
- 1-2 tablespoons of avocado or other oil, for stir-fry
- 2-3 teaspoons of Liv Cook Eat Delicate Soy
- 2 tablespoons of rice wine or sake
- 2 heads of washed and crisped baby gem lettuce

- Prepare mise en place of all ingredients for stir-fry.
- In a wok or pan over a medium-high flame, heat oil and add sausage. When it releases its oils (about 2 minutes), add mushrooms. Stir-fry until mushrooms wilt (about 2 minutes)
- Add water chestnuts and toss for 2 minutes. Add oyster and soy sauce and wine, and stir fry until absorbed (about 3 minutes).
- Remove from heat. Serve at room temp with lettuce leaves for wrapping.
